TASTING NOTES
The essences of black currant and cherry combined with nutmeg, and cedar are present on the nose of this classic Cabernet Sauvignon. Rhubarb, raw almond, and cherry pepper are detected on the palate with cardamom and a dark chocolate finish from aging in French and American oak.
WINEMAKER’S PRODUCTION NOTES
A blend of two great Paso Robles vineyards provides the quality fruit for this bold Cabernet. After a 3-day cold soak, the wine was pumped over 3 times a day throughout fermentation. An exceptional example of the power and structure of Paso Robles Cabernet Sauvignon. This wine exhibits a rich pallet with bright Cassis and welcoming fruit notes to round out the palate.
